Garden Egg Stew: Boiled yam is one food we all love to eat both in the rural and urban areas. This variety of food can go down with a lot of companions like oil, stew etc. But, of all these companions, boiled yam has its best friend – Garden egg stew!
let’s go on the journey of Garden egg stew…

INGREDIENTS:
8 big garden eggs
1 cup palm oil
Onions
Pepper & salt to taste
1 small ogiri okpei
Smoked fish (as desired)
Crayfish

Garden Egg Stew

PREPARATION:
• Rinse the garden eggs very well and remove the stalk.
• Blend the garden eggs into a smooth puree
a. With a blender:
i. Cut the garden eggs into small pieces. Put in a blender and pour just enough water to help the blades of your blender move.
ii. Blend till smooth.
b. With a mortar and pestle:
i. Pour the garden eggs into a pot with boiling water, cook till soft.
ii. Peel the water-proof skin of the garden eggs.
iii. Pound in a mortar till a smooth puree is achieved.
• Slice or dice the onion(s) into small pieces.
• Pound the pepper and ogiri okpei in a mortar till smooth.
• Debone the smoked fish and separate them into small pieces and wash.
• Boil the yam or what will be used to eat the sauce.

Cooking Directions
1. Pour the garden egg puree into a clean pot and cook till all or almost all the water dries up (i.e If you used blender to blend the garden egg). Set it aside.
2. Pour the palm oil into a clean dry pot and heat it up. Do not bleach it, you only need to heat till a piece of onion sizzles when added to the hot oil. (If you used mortar to pound the garden egg, then this should be your first step).
3. When the oil is hot enough, add the onions and fry for about 2 minutes.
4. Add the garden egg puree and stir for a bit. Cover the pot and cook-fry for some time and stir again.
5. Repeat step 4 till the small amount of water in the puree dried up. the palm oil will also be separated from the puree.
6. Add the crayfish, ogiri okpei, habanero pepper blend, salt and seasoning cubes to your taste.
7. Add the smoked fish, stir, cover and leave to simmer for some minutes and it’s done!
