How To Make Plantain Frittata Delicacy (African Pizza)

Breakfast is the most important meal of the day and special care should be given to it. You don’t need to rob a bank to fix a superb breakfast for yourself or family. Everyday, we eat things the normal way we’ve always known them to be, but sometimes it is actually good to transform those everyday ingredients to something else.

Today we look at two of the most common kitchen ingredients: Plantain and egg to make a combo known as the Plantain Frittata (plantain pizza).

INGREDIENTS:
1. 2 ripe plantain
2. 5 eggs
3.Sausage (optional)
4. Diced tomato
5. Chopped onions

6. Garlic/garlic powder

7. Chilli powder

8. Curry powder

9. Salt to taste

10. Thyme

11. Green bell pepper

12. Carrot

13. Cooking oil

METHOD:
1. Saute onions and garlic in a saucepan, add the tomatoes, fry for about a minute.
2. Cut the sausage into your desired size and shapes and add .
3. Add all your seasonings (curry, thyme, stock cubes, chili powder, salt) and stir.
4. Add the green pepper and carrot. Reduce the heat, stir and cover for about 2-3 minutes.
5. Whisk eggs in a bowl, pour the fried sauce into the eggs and stir gently. Set aside.
6. Cut the plantains into thin round shapes and fry until golden brown or till done. (Do not fry too much)
(There are two approaches to the frittata, it can be either baked or fried)

THE BAKING METHOD
1. Grease your baking pan with vegetable oil or margarine.
2. Pour the whole mixture into the greased pan.
3. Gently place the fried plantains on top of the egg mixture to fill. Be careful not to drown the plantains, it should float on top of the egg not immersed in it.
4. Garnish with long strips of green bell pepper and carrot.
5. Bake for 25-30 minutes on “350F” heat.

THE FRYING METHOD:
1. Smear a little oil in a heavy based pan
2. Reduce the heat and pour the mixture into the pan. Garnish like the baking method.
3. Cover with foil and a lid
4. Fry on low heat for 15-20 minutes.

That’s it! Once it cools down, your plantain frittata is ready to go!
NB: Only use a non-stick pan for the frying method. Preferably fry the plantain first, before the sauce filling.
